I found this several years ago on Epicurious and it is one of my favorite salads. It has just the right balance of savory and sweet. I usually use a rotisserie chicken for flavor and ease of preparation.
MIX broth, parsley, olives, lemon juice, black pepper, tomatoes and rice in 3-qt. shallow baking dish. Cover.BAKE at 375Â°F. for 20 min.TOP with chicken. Sprinkle with garlic powder and paprika.BAKE 30 min. or until chicken and rice are done.TIP: Swanson K

This was in our local newspaper. I had all the ingredients on hand, so I tried it. It was a hit! It is very tasty, and goes well with pasta and a salad.
The selection of spices used in this dish create an exotic aroma. I love the combination of olives, capers and tomatoes. It's one of my favorites. You could serve it with steamed couscous, but we prefer it with rice. Plan ahead as it needs to marinate.
This is very yummy and makes a good weeknight meal. I serve it with short-grain brown rice with olive oil and grated parmesan cheese and a green vegetable.
